Fruit-Topped Oatmeal Snack Cake

I made this today  for the kiddies, and ended up eating way too much of it myself.  Very moist and not too sweet, a great after school/tea time snack.  I made mine with peaches, but apples would be equally delightful.


2-3 peaches, peeled and thickly sliced (i used freshly frozen)
1 1/4 cups boiling water
1 cup instant oatmeal
1/2 cup  + 2 tbsp margarine
1/2 cup brown sugar
2 eggs
1/4 cup plain yogurt
1 teaspoon vanilla
1 1/2 cups whole wheat flour
1 teaspoon baking soda
ground cinnamon to taste
1/2 teaspoon salt


Preheat the oven to 350 degrees F.

Pour boiling water over instant oatmeal and let stand for 20 minutes.

In a large frying pan, melt 2 tbsp of margarine. Add sliced fruit, sprinkle with cinnamon and reduce heat.  Stir occasionally.

Cream together the margarine and brown sugar. Add the eggs, vanilla, yogurt and oatmeal and mix very well. Blend in flour, soda, cinnamon, and salt. Mix well until blended.

When fruit is soft, pour  into the bottom of a 9″ square cake pan sprayed with cooking spray. Pour batter carefully on top, being careful not to disturb the fruit (you may find it easier to dollop it by large spoonfuls).

Bake approximately 30 min until cooked through.  When slightly cooled, turn out onto plate.
