Easy Basmatti Rice with Ginger

This easy basmatti rice is my new go-to side dish.  It’s quick and easy to prepare and is wonderfully fragrant.  The deep yellow colour prevents the “Oh no, not plain white rice again” woes from the older kids, and the taste is mild enough that all ages enjoy it.

Easy Basmatti Rice with Ginger

1 cup basmatti rice
1 1/2cups chicken broth
2 tsp olive oil
1 tbs fresh chopped ginger (I use the jarred stuff)
1/2 tsp ground turmeric
1/4 tsp ground cinnamon
peas for colour

In medium saucepan, heat olive oil. Add ginger and stir until fragrant (1-2 min). Add rice and stir to coat. Reduce heat and add broth, spices and peas. Stir. Cover and simmer on low heat, stirring frequently, until cooked (add a bit more broth if necessary).

Makes a great BBQ side dish!
