Slow Cooker Potatoes with Carmelized Onions

This is one of my favourite summer side dishes.   These tiny potatoes turn out tender and delicious and are a breeze to make.  Throw something on the BBQ and toss a simple salad, and you have yourself an easy dinner without heating up the kitchen.

Slow Cooker Potatoes with Carmelized Onions

2 large sweet onions (Vidalia), thinly sliced
1.5 lbs tiny new potatoes, halved
1/4 cup butter, melted
1/2 cup beef or chicken broth
3 tablespoons brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper

Place onions and potatoes in slow cooker.

In a small bowl, combine remaining ingredients and poor over onions
and potatoes.

Cover and cook on low heat setting for 6 to 7 hours or on high heat
setting for 3 to 3.5 hours. Stir gently before serving. Serve with a
slotted spoon.

    For those in Canada, stores that carry PC products have awesome tiny potatoes in red or white. They’re perfect for this recipe.

    I ABSOLUTELY LOVE THESE!!! Thanks for the recipe Maranda! There’s some good stuff on here. I’m definitely going to follow you on this site and keep an eye out for more goodies! I’m going to try your Slow-Cooker Mexican Chicken next – sounds delicious!
